If you are just getting into baking cakes, you might want to start with Pound Cake.
It is the easiest to make.
1 cup Margarine/butter
1 cup Sugar 4 large Eggs Food fragrance such as zest, nutmeg (half-teaspoon), 2 teaspoons vanilla extract etc 2 cups of Flour 2 teaspoons Baking soda.
Preparation. I have listed the ingredients in the order in which they should be used. A key factor in this preparation is smoothness and you want it to be fluffy as well. The lighter the batter the more mouth-melting cake you would have. For this effect, allow ingredients to come to room temperature before using.
a. Start by whipping the butter/margarine until it is very light. b. Add sugar and continue till you feel most of the grains broken down. (You can simply put it through the food processor, before you use it in the cake mix. c. Add the eggs, one at a time. That will help maintain the creaminess and make it stay fluffy. d. Add food fragrance or colors etc.. along with 1/8 teaspoon of salt. You don't really need too much salt here. e. Add flour - a little at a time as you stir. The flour should always be siffted. Mama always repeated this. (as she put it, you don't want lumps or nkotowa in the mix) f. Add baking powder.
g. Let it sit for a few minutes. h. Pour into a greased baking dish, and bake at 350 degrees for about 50 minutes.
The cake is done if you insert a skewer or toothpick and it comes out clean.
